Delectable Pumpkin Banana Bread

admin This recipe is complete comfort food, yum! For those days when all you feel like doing is crashing on the couch when your kids go to bed this quick bread is a great healthy, tasty, and satisfying snack.
I’ve had some overripe bananas on my counter for a few days – couple that with a craving for banana bread and a desire to have a healthy dessert and you get this amazing bread that is too good NOT to enjoy. I’m not sure that there will be any left by the time my husband gets home from his trip in a few days. I was very satisfied with my creation and I hope that you will enjoy it as much as I have.
Have you noticed a theme around here? I pretty much put pumpkin in anything that I can.
Delectable Pumpkin Banana Bread
1 over-ripe banana
1/2 can pureed pumpkin
2 eggs
1/4 of a cup milk kefir
1/2 cup coconut oil
2/3 cup Maple Syrup
2 cups Whole Wheat flour or freshly ground flour
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp ginger
1/2 tsp salt
1/2 tsp baking soda
Mix all wet ingredients together. Add dry ingredients and mix well. Pour batter into a loaf pan, heat oven to 350 and bake for 1 hour.
Seriously, this bread is so good it should win an award or something! This is bread that makes my mouth go mmm….
And yes, I admit it to the world. I ate this for dinner tonight – hubby is out of town.

Hey, at least it is healthier than most banana breads. By the way, what is milk kefir? I know I could look it up, but if you could let me know, I would appreciate it.
